2 Avocados (Ripe)
4 TBSP Cocoa Powder
Your choice of sweetener (to taste)
Remove Avocado pit and casing, put in blender. Add cocao, blend on high, adding just enough cold water to make it blend. Add sweetener to taste. I usually use Stevia or Monkfruit for a low-calorie healthy option. Blend till smooth. You can add a few drops of peppermint extract, vanilla extract, or almond extract if you want to flavor it. This looks great piped on a plate from a pastry bag into a dish or bowl. Chill until served. You can garnish this with fresh whipped cream, a sprig of mint and/ or some fresh berries. Refrigerate any unused pudding.
